2.5 Syntheses of coumarate and caffeate derivatives
A solution of caffeic acid (180 mg, 1.0 mmol) in dry pyridine (0.3 mL) was added of acetic anhydride (0.47 mL, 5 mmol) and then stirred at r.t. over night.
The reaction mixture was gently heated under vacuum to evaporate excess acetic anhydride and pyridine thus obtaining quantitatively (2E)-3-[3,4-bis(acetyloxy)phenyl]-2-propenoic acid (264 mg, 1.0 mmol).
